[Woodworkers] Centerpieces?

A Grand Daughter is to be married later next year and wants a few wooden centerpieces as shown in the photo.
Am concerned about drying and cracking.
Should these be made of live wood or well dried material?
Appreciate any tips from you folks that may have done something like this!
