[Woodworkers] Protecting wood

Dogwood, no finish.  Pounding cabbage is going to breakdown and film finish.  Oil finishes in that use are going to provide little protection for the wood.  So looking at the wood becomes your best alternative for a suitable tool.  Dogwood is a closed grain wood which work hardens.

That being said I suspect the folks who make the most sauerkraut for the most years have the answer in terms of wood species.

Just like the best rice is cooked in a hand hammered pot.  Sauerkraut must have some very old traditions which have served millions of cabbage pounders for thousands of years.
